The Chop Shop Butchery was founded almost 10 years ago in an effort to highlight Western North Carolina farms that practice in a natural, humane, sustainable fashion. Three years ago, PJ and Sharon Jackson, along with Head Butcher Matt Helms purchased the business and focused even harder on the relationships with the farms that supply the shop. 

Our relationships have grown the farm's footprint not only in the retail environment but also supplying some of the best restaurants in Western North Carolina. The growth of the farms as well as the retail shop has allowed fair pay for all persons involved - from the farmers to the delivery drivers, butchers, cooks, and especially our customer service team. 

The ability to shine a light on the skilled passionate farmers of Western North Carolina has changed the way residents of the area choose to buy their meats - whether cooking at home or enjoying a night on the town with one of many talented chefs in Asheville. 

PJ's "Famous" Potato Salad

Ingredients:

2lbs red potato, quartered

2 stalks celery, medium dice

1/4 red onion

6 strips of bacon, roasted until crispy and cooled and cut to desired size

1/4 cup chopped parsley

1 1/2tsp ground mustard seed

1tbsp smoked paprika

1tsp celery seed

Salt & pepper to taste

1/2 cup mayonnaise

1/4 cup sour cream

Instructions:

Quarter red potatoes

Cover in cold water, add some salt

Bring to a boil

Turn down and simmer until cooked — do not overcook!

Drain and cool on a sheet tray in the fridge

Mix medium diced celery, red onion, bacon, parsley, ground mustard seed, smoked paprika, celery seed, black pepper, and salt into the cooled potatoes. GENTLY!

Add mayonnaise and sour cream and fold until covered

Refrigerate until ready to serve. ENJOY!
